Overnight oats, three ways

A breakfast that makes itself. The base is the same — the toppings change with the week.

Ingredients

  • ½ cup rolled oats
  • ½ cup milk of choice (dairy or oat)
  • ¼ cup plain yogurt (optional)
  • 1 tsp chia seeds
  • 1 tsp honey or maple syrup
  • Pinch of salt

Method

  1. Combine everything in a small jar with a lid.
  2. Stir, seal, refrigerate overnight (or at least 4 hours).
  3. In the morning, top with: berries & almond butter · sliced banana & cinnamon · or stewed apple & walnuts.

Golden lentil soup

Red lentils, turmeric, ginger, and a slow onion. Better on day two.

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp grated fresh ginger
  • 1½ tsp ground turmeric
  • 1 cup red lentils, rinsed
  • 5 cups vegetable or chicken stock
  • 1 bay leaf · juice of ½ lemon · salt to taste

Method

  1. Soften the onion in olive oil over medium heat, 8–10 min.
  2. Add garlic, ginger, and turmeric; stir for 1 min.
  3. Add lentils, stock, and bay leaf. Simmer covered 25 min, until lentils are very soft.
  4. Remove bay leaf. Stir in lemon juice. Salt to taste.
  5. Optional: blend half the soup for a creamier texture.

Sheet-pan salmon & greens

One tray, one oven — the cleanest weeknight dinner going.

Ingredients

  • 2 salmon fillets (skin on)
  • 1 small head broccoli, cut into florets
  • 1 small bunch asparagus, trimmed
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • Salt, black pepper, garlic powder
  • Optional: a few capers or olives, fresh dill

Method

  1. Heat oven to 220°C / 425°F.
  2. Toss vegetables with 1 tbsp olive oil, salt, and pepper on a sheet pan.
  3. Roast 10 min. Push vegetables to the edges; add salmon (skin down) and lemon slices in the center.
  4. Drizzle remaining oil, season salmon. Roast a further 8–10 min until salmon just flakes.
  5. Finish with fresh dill and a squeeze of lemon.

Mediterranean chickpea bowl

Crisp cucumber, tomato, herbs, lemon, and a generous pour of good olive oil over grains.

Ingredients

  • 1 cup cooked grains (farro, bulgur, or brown rice)
  • 1 can (400 g) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • Handful of parsley and mint, chopped
  • 3 tbsp olive oil · juice of 1 lemon · salt · pepper · pinch of cumin

Method

  1. Whisk olive oil, lemon juice, salt, pepper, and cumin in a small bowl.
  2. Combine chickpeas, cucumber, tomato, onion, and herbs in a larger bowl.
  3. Pour dressing over and toss gently.
  4. Spoon over warm grains. Eat at room temperature — it's better that way.

Vanilla chia pudding

Already portioned when you open the fridge on a tired morning.

Ingredients

  • ¼ cup chia seeds
  • 1 cup milk of choice
  • 1 tsp vanilla extract
  • 1–2 tsp maple syrup
  • Toppings: berries, sliced fruit, toasted nuts

Method

  1. Whisk chia, milk, vanilla, and syrup in a small bowl.
  2. Wait 5 minutes, whisk again (this prevents clumps).
  3. Divide between two small jars. Chill at least 4 hours, ideally overnight.
  4. Top before eating.

Turmeric-ginger golden milk

A warming spiced drink for an evening at home.

Ingredients

  • 1 cup milk of choice
  • 1 tsp ground turmeric (or 1 inch fresh, grated)
  • ½ tsp ground ginger (or 1 tsp grated fresh)
  • Pinch of black pepper
  • Pinch of cinnamon
  • 1 tsp honey or maple syrup, to taste
  • Optional: ½ tsp coconut oil

Method

  1. Warm milk gently in a small saucepan over medium-low heat — don't let it boil.
  2. Whisk in turmeric, ginger, pepper, cinnamon, and coconut oil (if using).
  3. Simmer 2–3 minutes, whisking occasionally.
  4. Strain into a mug. Stir in honey. Sip slowly.
